All the flavor of enchiladas, but in an easy to make slow cooker casserole recipe. This cheesy comfort food is the perfect family meal with layers of beef, cheese, tortillas and enchilada sauce. Serve for Taco Tuesday!
In a large skillet over medium heat, spray with cooking spray and add the ground beef. Cook the beef until browned, crumbled and cooked through.
Add onions to the beef and cook for 2 to 4 minutes, until softened. Stir in the salsa, diced green chilies and taco seasoning and remove from heat.
Spray a 6 quart slow cooker with cooking spray. Pour ¼ cup of the enchilada sauce into the bottom of the slow cooker.
Add 4 tortillas to the bottom of the slow cooker (tearing if needed to spread evenly), and top with ⅓ of the ground beef mixture, then ⅓ cup enchilada sauce, followed by ⅓ of the shredded cheese. Repeat with two more layers.
Place the lid onto the slow cooker and set to high for 2 to 3 hours or low for 3 to 5 hours.
Allow to cool slightly before serving and garnish with your favorite toppings like sour cream, cilantro and hot sauce.
