Warm Caesar Potato Salad

Warm Caesar Potato Salad is the best of two favorite summer salads! It has all the yummy flavors of Caesar salad combined with the comforting bite of potatoes.

I was a fussy kid and the only salad I would eat was Caesar Salad. It’s typically made with romaine lettuce, croutons, and Parmesan cheese. lemon juice, olive oil, an egg, Worcestershire sauce, pepper, and black garlic. However, I’ve seen it served many ways by adding some grilled chicken or a creamy dressing and even lobster.

This recipe for Warm Caesar Potato Salad is more Caesar salad than potato salad in my opinion. It has many of the traditional Caesar salad ingredients, but also adds some cooked potatoes. The potatoes are cooked in the dressing on the stovetop so the fresh garlic flavor can permeate. It is SO GOOD! I often have cravings for this salad.

Ingredients

  • Red potatoes will add color to the salad as well as a mild sweet flavor. Using red potatoes specifically will help the potatoes stay more firm during the cooking process and not the typical mushy texture.
  • Romaine lettuce is the perfect neutral lettuce, it is crisp and fresh but not too sweet and doesn’t taste like you’re eating grass.
  • Extra virgin olive oil will add a slight pepper taste to the garlic mixture.
  • Garlic, lemon juice, fresh parsley, Worcestershire sauce, salt and pepper, and mustard cook together with the potatoes to give them a slightly tangy flavor that is perfect for salads. 
  • Parmesan cheese and garlic croutons are completely optional but I highly recommend them for when the salad is ready to be served.

How to Make Warm Caesar Potato Salad

  • Step One: Boil potatoes in salted water until just tender, about 20 minutes. Drain and let cool slightly. Cut into cubes. Set aside.
  • Step Two: Tear lettuce into bite sized pieces and put in a large bowl. Set aside.

  • Step Three: In a large skillet, heat olive oil over medium heat and cook the garlic for 2 minutes. Stir in lemon juice, parsley, Worcestershire sauce, mustard and salt and pepper.
  • Step Four: Add in potatoes and cook over medium heat for 2 minutes, stirring constantly.
  • Step Five: Pour potato mixture into bowl with lettuce and toss. Sprinkle with Parmesan cheese and toss. Add croutons to individual salad plates, if desired.

    This is a wonderful side dish that will compliment any main dish but I recommend serving it with Stuffed Burgers or Grilled Sesame Shrimp and Veggies for a wonderfully delicious meal. It can be served anytime of the year so be sure to try it for the next BBQ cookout or family dinner night.

    Substitutions and Variations

    • Adding more vegetables like carrots or tomatoes.
    • Substituting the lettuce for spinach will give the salad an earthy flavor as opposed to crisp.
    • Adding a salad dressing on the side will take this salad to an entire new level with flavors. Try Italian dressing or Ranch dressing for the best combination but any would be fine.
    • Adding in hard boiled eggs will provide a bit more protein and give the salad another flavor that blends well with the lettuce and potatoes. 

    Storage Instructions

    Store any leftovers in the fridge in an airtight container for up to 3 days.

    Can I Freeze?

    Yes, you can! Cook the potatoes first, then freeze them, until you are ready to put together your salad. The potatoes can be store in the freeze for up to 3 months. I wouldn’t recommend freezing the whole salad together after being made since the lettuce could get a little more soft and less crisp after unfreezing.

    • ¼ cup Parmesan cheese shredded
    • ¾ cup garlic croutons
