Though I love to cook delicious meals for my family, sometimes I’m just not in the mood to put much effort into a meal. On those days I’m feeling a bit lazy, I look for simple and fast recipes featuring ingredients I already have on hand. As long as it tastes good, my family never complains. These Turkey, Cranberry & Brie Quesadillas are a perfect fit when you only have a few spare minutes to make lunch or a snack. You’ll love how quick and easy they are to make. A delicious lunch is just minutes away.
Grab some Dempster’s Original 7″ Tortillas, cranberry sauce, Brie cheese and turkey deli meat.
Though this recipe doesn’t really require much explanation, I’ll still walk you through the few short steps to make it. First, spread the cranberry sauce on half of your tortilla.
Roll up the turkey deli meat and place it on top of the cranberry sauce
Top with slices of Brie cheese. If you don’t have Brie at home, feel free to use whatever cheese you have on hand.
Fold up the tortilla to close it. You’re ready to heat it up!
Use a non-stick frying pan so you don’t have to add any oil to the pan. Heat on medium-high heat about 2 to 3 minutes per side. Cut in half and serve. The tortilla will be nice and toasty with the Brie cheese melted inside. Yum!
Serve with some extra cranberry sauce if you like. It’s yummy for dipping.
Enjoy them on their own for a quick afternoon snack or serve with some soup to make a complete lunch meal. Easy peasy.
It’s the perfect marriage of ingredients and works great with leftover turkey and cranberry sauce from Thanksgiving or Christmas dinner.
I used the small Dempster’s Tortillas to make this recipe more kid friendly. You could also use the 10″ inch size for a more substantial meal. Just use more turkey deli meat and an extra helping of cranberry sauce and Brie cheese.

Turkey, Cranberry & Brie Quesadillas
The best Thanksgiving leftover sandwich EVER. Wrap up all your holiday favorites with some melty brie in a warm tortilla.
Ingredients
- 2 Dempster’s 7″ Original Tortillas
- 2 tbsp cranberry sauce
- 12 1-inch slices Brie cheese
- 2 slices turkey deli meat
Instructions
- Spread 1 tbsp of cranberry sauce on half of two Dempster’s Tortillas.
- Fold 1 turkey deli meat slice and place on top of cranberry sauce.
- Top with 6 slices of Brie cheese on each slice of turkey deli meat and fold tortilla in half.
- Place tortillas in a large non-stick frying pan over medium-high heat. Cook 2 to 3 minutes per side. Cut in half and serve.
