I’m pleased to say that I’m now down 35 lbs since February and it’s all thanks to a low carb diet I’ve been following. It’s actually not that hard to do and I don’t feel like I’m depriving myself of foods that I enjoy eating. Take pasta for instance. We all know pasta = carbs, but it’s comfort food and something I love to eat. So I decided to improvise a bit. I use thin strips of zucchini as my “noodles” and my favourite sauce and I can still enjoy a good meal and not cheat on my diet. Zucchini Noodles are so simple to make and oh so yummy!
The main ingredient is of course, zucchini.
Use a carrot peeler to shave off thin strips. These will be your “noodles”.
Saute the zucchini in butter for about 15 minutes. Top with your favourite sauce. I look for sauces that contain no added sugar. Enjoy!
