I like the Muffin Tin Mashed Potatoes idea and will be trying these out with my leftover mashed potatoes. I do not like wasting food and this is a good way to reuse mashed potatoes.

I love potato cakes (as we call them back home), dripping with butter of course. When the kids were small I’d do a whole baking tray full in the oven and then just cut it up as we went, wasn’t often much left 🙂
