These tender, savory pork chops are my new go-to for days when I need a super easy weeknight meal for the family. They’re cooked in a decadent sauce filled with garlic, green peppers, black olives, and spices. And don’t worry – if you’re not a fan of olives, you can just leave them out!

I’ll be honest and say that I don’t cook with pork that often as it’s just not my favorite meat to work with. But the rest of my family adore it, so I’ve been trying to work it into our weekly rotation more often. Luckily for all of us, this super tasty dish makes it incredibly easy to whip up a high-protein dish that’s bursting with flavor.

And I’m not kidding when I say it’s EASY. This recipe is cooked in a single pot (yup – minimal cleanup!), and simmers away for 30 minutes. That gives you time to tidy up while you’re prepping and doesn’t leave an utter disaster in the kitchen to deal with after eating. Now that’s what I’m talking about!

  • Pork chops: I recommend grabbing pork chops that are at least an inch thick. This way, they won’t dry out.
  • Vegetable oil: This oil is easiest to find, but any neutral-tasting oil should be fine (avocado oil is great too!).
  • Tomatoes: For a touch of acidity.
  • Garlic and onion: Forms the savory base and adds depth of flavor to the dish.
  • Green pepper: For a subtle crispiness and sweetness. You can technically switch this out for yellow or red pepper, but I can’t get enough of the earthy flavor of green peppers.
  • Sugar: I love using brown sugar for a slightly caramelized flavor and balancing the acidity of the tomatoes.
  • Sage and fresh parsley: Gives the pork chops a subtle, herby flavor that works beautifully with the tomato-based sauce.
  • Black olives: The darkest, kalamata olives you can find will be the most flavorful.
  • Salt and pepper: To taste.

How to Make Savory Pork Chops

  • Step One: Add vegetable oil to a large skillet over medium-high heat.
  • Step Two: Add the pork chops and brown both sides.
  • Step Three: Throw in the tomatoes, garlic, green pepper, onion, sugar, sage, salt, and pepper.
  • Step Four: Cover the skillet and cook over medium heat or until the pork chops are fully cooked through.
  • Step Five: Stir in black olives and parsley before covering and cooking for a further 10 minutes.
  • Step Six: Serve hot and enjoy!

    • When you’re shopping for pork chops, I recommend choosing slightly thicker ones. They’ll still cook evenly, but they’re less likely to dry out than thinner cuts.
    • As you really don’t want to mess around with undercooked pork, use a meat thermometer to check your chops.
    • If you want to tenderize your chops, break up the tissues with a meat mallet.
    • Make sure to properly season your pork chops on both sides before cooking. This way, you’ll get maximum flavor in every bite!

    Variations and Substitutions

    • Although the flavors in this recipe complement pork, you can easily switch it out for chicken instead.
    • If you don’t want to use regular sugar for this recipe, you can use light brown sugar. It’s slightly more caramel-like and tastes amazing with the pork.
    • A small dash of mustard will give your pork a delicious tang.

    Storage Instructions

    You can store the leftovers in the fridge for up to 2-3 days. Just make sure they’re in an airtight container to keep them as fresh as possible!

    If you need to reheat your savory pork chops, you can place them on the stovetop on low heat or heat them up in the microwave.

    Can I Freeze?

    You can technically freeze these savory pork chops for up to 3 months in an airtight container.

    Just remember that the texture of the dish might deteriorate slightly as time passes.

    Why Add Sugar to Tomato Sauce

    You’ll notice that I have sugar listed as one of the ingredients. It might seem weird since this is a savory dish. However, the sugar is added to bring balance to the acidity of the tomatoes. Adding a little sweetness to the recipe helps tone down the acid.

    Ingredients
     
     

    • 6 boneless pork chops
    • 1 tbsp vegetable oil
    • 5 small tomatoes cut into wedges
    • 2 garlic cloves minced
    • 1 green pepper thinly sliced
    • 1 sweet onion thinly sliced
    • 1 tbsp sugar
    • ¼ tsp dried sage
    • ½ tsp salt
    • tsp pepper
    • ½ cup black olives
    • 2 tbsp fresh parsley chopped

    Instructions

    • Add vegetable oil to a large skillet over medium high heat. Add pork chops and cook until the outside is browned on both sides. Add tomatoes, garlic, green pepper, onion, sugar, sage, salt and pepper.
    • Cover and cook over medium heat for 30 minutes or until pork chops are fully cooked.
    • Add black olives and parsley, cover, and cook for 10 minutes. Serve hot.

    1. This great, let me share mine version.

      Crack black pepper over the chops and salt them lighlty. Dredge them in flour, and set aside.

      Preheat your oven to 275 F.

      Heat a cast iron skillet on the stove, over a medium gas flame if possible.

      Let the skillet become glowing hot, then pour in a generous amount of peanut oil or other cooking oil with a very high smoke point.

      Sear the chop or chops thoroughly on both sides.

      Add previously sautéd mushrooms and onions to the pan. Pour in some strong chicken stock, homemade if you have it. Add some minced garlic and a bay leaf or two.

      Remove the skillet from the stove and place it in the hot oven for at least an hour, covered.

      The pork will become fork tender and all the ingredients will melt together. You will also have an unctuous gravy as a side effect.

      Serve the chops as hot as possible with mashed potatoes on the side. Top it all with the gravy.

      If you want to be really advanced, find a source for the tiny, Amish-style egg noodles common to Ohio and Indiana and cook them uncovered in boiling chicken stock until all the stock evaporates.

      Dish the mashed potatoes onto plates and use a big spoon to create despressions in each serving. Fill those with the noodles.

      Then plate the chops and cover everything with the gravy.

      This is without a doubt the best way to cook and serve pork chops.
