    Storage Instructions

    If you’re not chowing down on this peach chicken straight away (I usually do!), you can store it in an airtight container.

    It should stay fresh for up to 4 days, but the peaches will start to disintegrate after that point.

    If you need to reheat the dish, pop it in the microwave and heat it up in short increments to stop the peaches going mushy.

    Can I Freeze?

    You can totally freeze this peach chicken recipe, but it won’t quite be at its best as the peaches might go mushy when thawed.

    Simply wait until the dish has cooled and then place your leftover chicken in airtight containers or labeled Ziploc bags.

    If I’m being honest, I suggest freezing the chicken and making the peach mix again when you’re ready to eat.

    An easy dinner with cubed chicken breasts and sliced peaches. Perfectly sweet and delicious!

    Ingredients
     
     

    • 2 boneless skinless chicken breasts cubed
    • 2 tbsp extra virgin oil
    • 1 sweet onion chopped
    • 1 can sliced peaches in water 28oz can
    • 1 tbsp cornstarch

    Instructions

    • Drain peaches and save the liquid. Mix cornstarch with the peach liquid and set aside.
    • Heat oil in frying pan over medium high heat. Add onions and sauté for 2 minutes. Add chicken and stir to combine. Cook for 8 to 10 minutes or until chicken is cooked through, stirring occasionally.
    • Add peaches to pan and stir to combine. Pour liquid in the pan. Bring to a boil, stirring constantly. Reduce heat to medium low and simmer until liquid has thickened, about 5 minutes. Serve over a bed of rice.
