Stuffed Bacon Rolls are a great party appetizer! Smoky bacon wrapped around juicy meatballs for a meaty snack. Bacon-wrapped meatballs are a meat lover’s dream and are sure to be gobbled up fast during your next get-together.

Everything tastes better wrapped in bacon, right? These Stuffed Bacon Rolls are a two-bite appetizer that screams “Get in my belly!” Once I started eating them, I couldn’t stop. They are on the larger side so you could even serve them for your main course!

The inside is a savoury meatball packed full of flavour. It pairs perfectly with the saltiness of the bacon. Each bite of these bacon roll-ups is juicy and delicious.

Sure you could simply wrap a piece of bacon around a frozen meatball and call it a day but the little bit of extra effort is so worth it.

    Ingredients

    • Bacon 
    • Vegetable oil
    • Onion
    • Garlic
    • Mushrooms – Use button, crimini, portobello, or any mushroom variety you like
    • Egg
    • Tomato sauce
    • Bread crumbs – I typically use panko breadcrumbs but Italian breadcrumbs, and fresh breadcrumbs work just as well. To make keto, you could use crushed pork rinds.
    • Ground beef – I like to use 80%-85% lean beef.
    • Salt and black pepper

    How to Make Stuffed Bacon Rolls

    • Step One: Preheat oven to 350F.
    • Step Two: Heat vegetable oil over medium-high heat in a skillet. Cook onion, mushrooms, and garlic until softened, about 6 minutes.
    • Step Three: In the meantime, add egg, tomato sauce, breadcrumbs, ground beef, salt and pepper in a large bowl. Add in cooked onions, mushrooms and garlic and combine together with clean hands.
    • Step Four: Lay out slices of bacon on a rimmed baking sheet. Spread meat mixture thinly over bacon slices. Roll up each strip of bacon like a jelly roll. Bake stuffed bacon rolls for 1 hour and 15 minutes. Serve hot.

    Recipe Tips and Tricks

    • Use regular cut bacon as thick cut bacon will be harder to roll up.
    • To reduce the amount of fat in the dish, cook on a rimmed baking sheet fitted with an oven-safe rack to catch the bacon fat.
    • Line your baking pan with parchment paper or aluminum foil for easier cleanup.
    • Toothpicks give the stuffed bacon rolls the perfect “handle” for serving.

    Variations and Substitutions

    • To sweeten things up, during the 10 few minutes of baking, brush bacon rolls with a simple glaze made by combining ½ cup ketchup or tomato sauce, ¼ cup brown sugar, and 1 Tbsp Worcestershire sauce.
    • You can also serve with your favorite barbecue sauce.
    • The minced garlic and diced onion can be replaced with ½ teaspoon garlic powder and ½ teaspoon onion powder.
    • Pork bacon is best for this recipe, but you can use turkey bacon too.

    Storage Instructions

    Store any leftover bacon rolls in an airtight container in the refrigerator for up to 3-5 days, though there isn’t likely to be any of this delicious appetizer left. 

    To reheat, place the stuffed bacon rolls on a rimmed baking sheet. Bake in a preheated 375F oven for 6-7 minutes or until warmed through.

    Can these Stuffed Bacon Rolls be made in advance?

    Yes, you can prep them in advance! Assemble the bacon rolls. Instead of baking, cover well and place in the refrigerator for up to 2 days. If storing in a glass baking dish, allow to sit at room temperature for 30 minutes before baking, to prevent breakage.

    Can I Freeze?

    Yes, you can freeze these bacon rolls. Freeze stuffed bacon roll-ups in an airtight container in a single layer, with parchment paper between each layer. Freeze for up to 1 month. To reheat, thaw in the refrigerator and reheat on 375F for 6-7 minutes or until warmed through.

    Ingredients
     
     

    • 24 slices bacon uncooked and cut in half
    • 1 tbsp vegetable oil
    • 1 small yellow onion chopped
    • 2 cloves garlic minced
    • ½ cup white button mushrooms chopped
    • 1 large egg
    • ½ cup tomato sauce
    • ¾ cup plain breadcrumbs
    • 1 lb lean ground beef
    • ¼ tsp salt
    • tsp pepper

    Instructions

    • Preheat oven to 350°F.
    • Heat vegetable oil over medium high heat in a skillet. Cook onion, mushrooms and garlic until softened, about 6 minutes.
