Trail Mix Oatmeal Cookies

I’ll be real and say that nothing beats the smell of these Trail Mix Oatmeal Cookies wafting through the house.

They’re beautifully buttery, and chewy, and are packed with delicious raisins for a hint of extra texture. Oh, and don’t forget the slivered almonds that add a nutty crunch to the mix!

What makes this one of my all-time favorite dessert recipes is the fact that it’s incredibly easy to whip up. Not only does it make great use of pantry staples, but it’s ready in 10 minutes!

Plus, it’s virtually impossible to overmix the batter (unlike certain cakes!). So, you’ll get perfectly golden, soft, and warm cookies every time you pull that tray out of the oven.

    Why You’ll Love These Trail Mix Oatmeal Cookies

    • They’re prepared in under 10 minutes!
    • They’re soft, warm, chewy, and buttery.
    • The mix-ins can easily be customized to suit the whole family.
    • They’re virtually foolproof to make and require just a handful of pantry staples.

    Ingredients

    • Butter. Adds a rich and decadent flavor to your cookies.
    • Brown sugar. I like using brown sugar for a molasses-like sweetness.
    • Egg. Binds the cookies together like a dream.
    • Almond extract. For a mild nutty flavor!
    • Oats. You should use rolled oats for this recipe (not the Quaker kind!). This will give you a chunky and firm result that won’t crumble or disintegrate when mixed with wet ingredients.
    • Flour. The base of our recipe that creates a light but chewy cookie. You’ll want to use regular all-purpose flour.
    • Baking powder. Crucial for getting a light rise on your cookies!
    • Baking soda.
    • Salt. Adds a slight saltiness to the recipe and balance the sweet ingredients.
    • Slivered almonds. You can use virtually any nuts you have on hand, but slithered almonds are easy to work with out of the packet!
    • Raisins. For a chewy and sweet burst with each bite!
    • Shredded coconut. This ingredient adds texture and sweetness to the recipe and pairs beautifully with the raisins.

    How to Make Trail Mix Oatmeal Cookies

    • Step One: Preheat the oven to 375F.
    • Step Two: Grease two cookie sheets and set them aside.
    • Step Three: In a large bowl, beat the butter and brown sugar until combined.

    • Step Four: Beat in the egg and almond extract.

    • Step Five: In another large bowl, stir together flour, baking powder, baking soda, oats, and salt.
    • Step Six: Add the dry mixture to the wet mixture and stir to combine.

    • Step Seven: Stir in the slivered almonds, raisins, and shredded coconut.

    • Step Eight: Place heaping tablespoonfuls of cookie dough on the baking sheet and place them around 2 inches apart.

    • Step Nine: Bake the cookies for 10 minutes and cool them on a cooling rack before serving.

    Recipe Tips and Tricks

    • It’s best to soften your butter to room temperature (but not to a melty point!). It should still be relatively cool as this will prevent your cookies from spreading too much or falling apart.
    • If you don’t trust yourself to get equal cookie measures on your baking sheet, use an ice cream scoop! If you find the cookies slightly too big, weigh your dough with a kitchen scale first.
    • If you want slightly thinner cookies, press down on the mounds with the bottom of a glass before baking. Otherwise, you can keep them in thick rounds for a chunkier bite!
    • It’s a good idea to take your cookies out of the oven when they’re brown but not stiff. You want them very slightly underbaked to keep them chewy in the center. Don’t worry, they’ll firm up on a baking sheet!

    Storage Instructions

    Your cookies will store in an airtight container at room temperature for just under a week. If you start to notice any texture changes or mold, it’s time to toss them!

    Can I Freeze?

    You can absolutely freeze these trail mix oatmeal cookies.

    Just wait for them to cool completely before placing them on a single layer of parchment paper in the freezer.

    Once your cookies have frozen, make sure they’re not stuck together before placing them in individual freezer bags!

    An easy cookie recipe packed with mix-ins! Loaded with raisins, coconut, almonds, and brown sugar.

    Ingredients
     
     

    • cup unsalted butter softened
    • 1 cup brown sugar
    • 1 large egg
    • ¼ tsp almond extract
    • 1 ½ cups old-fashioned oats
    • 1 cup all-purpose flour
    • ½ tsp baking powder
    • ½ tsp baking soda
    • ¼ tsp salt
    • cup slivered almonds
    • cup raisins
    • cup shredded sweetened coconut

    Instructions
