    Yes, you can make this recipe ahead of time. But, for the best results, I recommend storing each ingredient in separate containers. Then, combine them in a bowl right before you serve it.  

    What Kind of Rice To Use?

    I kept my recipe simple by cooking white rice with the rest of the ingredients. If you want to change it, leave the rice and water out of the recipe and make cilantro-lime rice on the side. 

    Can I Use Brown Rice? 

    Yes, you can use brown rice instead of white rice. This won’t change the cooking time. Just check the rice after about 20 minutes. If it’s not quite finished cooking, cook the easy chicken recipes for a bit longer.

    To make it low-carb, leave the water and rice out of the recipe. Serve some cilantro lime cauliflower rice on the side. It would be best if you also made it without beans. Add avocado to boost the healthy fats in the bowl. 

    What other types of chicken can you use? 

    Cut some chicken thighs into bite-sized pieces, or make crockpot chicken. You could also use rotisserie chicken.

    Ingredients
     
     

    • 1 tbsp vegetable oil
    • 1 yellow onion chopped
    • 1 red pepper chopped
    • 1 yellow pepper chopped
    • 3 tomatoes chopped
    • salt and pepper to taste
    • 3 tbsp tomato paste
    • 1 package taco seasoning
    • 1 can pinto beans 540ml cans, drained and rinsed
    • 2 chicken breasts uncooked, chopped into one-inch pieces
    • 1 cup rice uncooked
    • 2 ⅓ cup water
    • ½ cup cheddar cheese shredded
    • 2 sprigs cilantro chopped

    Instructions

    • Add vegetable oil to a large pot over medium-high heat. Add onions, tomatoes, red pepper, yellow pepper, salt and pepper. Cook for 6 minutes, stirring often.
    • Add tomato paste and taco seasoning. Cook an additional minute, stirring often.
    • Add chicken, pinto beans, rice and water. Season with salt and pepper. Bring to a boil over high heat.
    • Once boiling, cover and reduce heat to medium low. Simmer for 20 minutes. Remove from heat.
    • Stir in cheddar cheese and cilantro and serve hot.
