This no-bake lime cheesecake parfait is a dream during the summer months when you want something cool and creamy. That’s right, there’s no need to heat up the house any further by switching the oven on!

The bottom layer of this tasty treat is made with crumbled Oreo cookies for ease. But it’s the cheesecake mixture that makes this lime cheesecake parfait shine. It’s made with a mixture of cream cheese, lime juice, lime zest, sugar, vanilla, and whipped topping. Oh, and don’t forget a sprinkling of more crumbled cookies on top!

This is one of those desserts that I’ll pull out when I’m pressed for time. Not only does it firm up well in the fridge, but you can prep it ahead to whip out when the time is right!

    How to Make Lime Cheesecake Parfait

    • Step One: Crumble the Golden Oreos and evenly divide them between 4 parfait dishes.
    • Step Two: In a mixing bowl, beat the cream cheese, lime juice, sugar, vanilla extract, salt, and lime zest on medium-high speed until smooth.
    • Step Three: Stir in the whipped topping until everything is smooth.
    • Step Four: Pipe a pastry bag and tip (or use a spoon!) to add the cheesecake mixture to each of the parfait dishes.
    • Step Five: Crumble Golden Oreos and add to each dish for garnish.
    • Step Six: Serve and enjoy or store in the fridge until you’re ready to eat!

    Although this lime cheesecake parfait is glorious on its own, these tasty sides are perfect complementary picks! If you’re looking for savory accompaniments, virtually anything you put on the BBQ would work well with these.

    Recipe Tips and Tricks

    • If you’re serving your lime cheesecake parfait immediately, you’ll want to refrigerate your dessert bowls. This will prevent this dish from becoming a goopy mess if the weather warms up.
    • If you want to firm things up slightly, you can leave your parfaits in the fridge for a couple of hours.
    • Bring the cream cheese to room temperature before using it. I can’t overstate this enough – using cream cheese straight out of the fridge will cause serious lumps!
    • For finer and less chunky Oreo crumbs, crush them inside a Ziploc bag with the back of a spoon.

    Variations and Substitutions

    • If you don’t want to use Golden Oreos, you can use shortbread cookies or graham crackers! The latter ingredient will make these lime cheesecake parfaits taste more like traditional cheesecakes.
    • It’s not necessary for the recipe, but topping your parfait with a slice of fresh lime can really add to the aesthetics!
    • If you’re not a lime fan, you can switch the lime and lime juice for lemon! It’s a slightly different citrusy flavor, but it’s just as delicious.

    Storage Instructions

    I don’t recommend storing this lime cheesecake parfait for longer than 2 days (the Oreos will go soggy!).

    If you assemble your parfaits into dessert cups, try and lightly wrap them with plastic wrap to keep things fresh.

    Just give things a quick stir before serving.

    Can I Freeze?

    This recipe doesn’t freeze overly well, so I recommend eating it immediately or storing it in the fridge.

    Lime Cheesecake Parfait

    Cheesecake goes tropical! Try this dessert in a glass at your next fancy dinner party or family dinner where you want to feel special.

    Ingredients
     
     

    • 5 Golden Oreos crumbled, plus extra for garnish
    • 2 packages cream cheese 8oz/250g packages, softened
    • 3 tbsp lime juice
    • zest of 1 lime
    • 1 tsp vanilla extract
    • ½ cup sugar
    • pinch salt
    • 1 cup frozen whipped topping thawed

    Instructions

    • Crumble cookies and evenly divide among 4 parfait dishes.
    • In a mixing bowl, beat on medium high speed the cream cheese, lime juice, sugar, vanilla extract, salt and lime zest until smooth. Stir in whipped topping until smooth.
