The pizza craze continues, but this time I’m sweetening things up just a bit. Making a dessert pizza has been on my mind for the last while. I wanted to still use the refrigerated pizza dough for the crust instead of using a cookie-based crust as many dessert pizzas have. There is nothing wrong with doing it that way. I’m stocked up on pizza dough and need to use it up.

I made up my mind that I would make a Cherry Cheesecake Pizza. I imagined a slightly sweet crust with a rich, creamy cheesecake filling. I’d top it with some cherry pie filling. It looked perfect in my mind’s eye.

This cherry cheesecake pizza is perfection after a little trial and error. The first time around I thought a deep-dish pizza with a thick layer of cream cheese would be tasty. The result was an overdone crust and a loose cheesecake filling.

    The next day, I regrouped and decided to try again. This time I used a regular pizza pan and used less filling. My goal was to have the filling and the dough be both cooked perfectly at the same time. I figured it out. Round two was a success!

    I was pleased with how it turned out. The crust was perfectly golden and the filling looked set. I knew the real test would be when I cut a slice. I was keeping my fingers crossed it was cooked! I had a good feeling about it though!

    I breathed a quick sigh of relief when I placed a slice neatly on my plate. The cheesecake layer now worked perfectly with the pizza-thin quality of the crust. A little trial and error paid off this time! It is now a family favorite. Cherry cheesecake pizza is a celebration of flavors, and I know you’re going to love this easy recipe.

    Ingredients

    • Pillsbury Pizza Crust – You may also use homemade pizza crust or any brand of refrigerated pizza crust.
    • Cream cheese – You’ll want room-temperature full-fat cream cheese for this recipe.
    • Vanilla – Using pure vanilla extract is best if you can or even better a vanilla bean.
    • Lemon juice – The acid of the lemon juice reacts to the fatty proteins in the cream cheese for a nice thick texture.
    • Egg – Room temperature large eggs are always best for baking.
    • Sugar – Gives just the right amount of sweetness to the cream cheese mixture.
    • Cherry pie filling – The already sweetened cherry pie filling makes this recipe so easy to prepare.

    How to Make Cherry Cheesecake Pizza

    • Step One: Heat oven to 350F. Grease a pizza pan and spread out dough to fit. Sprinkle 1 tbsp sugar evenly over dough. Set aside.
    • Step Two: In a mixing bowl or bowl of a stand mixer, add cream cheese, vanilla, lemon juice, egg, and 1/3 cup sugar. Beat with an electric mixer on medium speed until smooth.
    • Step Three: Pour cream cheese mixture evenly over pizza dough leaving a gap around the edge. Place on the center wire rack of the oven and bake for 25 minutes or until cream cheese is set and the crust is lightly browned.
    • Step Four: Remove from oven and let cool 30 minutes. Then top with cherry pie filling leaving a gap around the edge. Use a pizza cutter to cut into slices.

    • You can drizzle a simple glaze made of powdered sugar and milk or heavy cream over the pizza.
    • Sprinkle the finished pizza with sliced almonds.

    • Add a little lemon zest over the top for a little zing and fresh flavor.
    • You could use a pie dough but in my opinion it would be overly sweet.

    Storage Instructions

    If you are making this ahead, you can wrap the entire pan in plastic wrap and store it in the refrigerator. I doubt there will be any leftovers but just in case, you can refrigerate uneaten portions in an airtight container for a few days.

    Can I Freeze?

    I don’t recommend freezing the Cherry Cheesecake Pizza as it will change texture in the freezer.

    Ingredients
     
     

    • 1 Pillsbury Pizza Crust or your own homemade pizza crust or other brand of refrigerated pizza crust
    • 1 package cream cheese 8oz/250g package, softened
    • 1 tsp vanilla extract
    • 1 tsp lemon juice
    • 1 large egg
    • cup sugar + 1 tbsp sugar
    • 1 can cherry pie filling

    Instructions

    1. I just came across this recipe on Pinterest, and I think I will try it. I know it’s an older post, but I’m wondering if you’ve ever made a pineapple upside down pizza. One of our local pizza buffets makes one that is AMAZING, and I’ve always wanted to make it but I’m not sure what the creamy “sauce” layer is.

      I just use regular homemade pie crust and put it on a pizza pan and works great with any fruit toppings
