Wendy’s Asian Cashew Chicken Salad
When it comes to fast food, Wendy’s has long been my favorite. I love the quality of the food they serve – I can really see and taste a big difference in their food compared to other big chains. When we’re out and about or traveling far from home and are looking for a quick and tasty meal, I always look for a Wendy’s!
Wendy’s sent me $10 in gift cards to try out their latest fresh-made salad creation – the Asian Cashew Chicken Salad. I’ve had salads at Wendy’s before and have always found them to be tasty and satisfying. I decided to take my little guy out for a special lunch treat while big brother was at school so that we could both enjoy some time out together and I could give this new salad a try. This salad really lived up to all the expectations I had. The lettuce was crisp and fresh, there were red peppers and edamame beans, topped off with warm grilled chicken, some spicy roasted cashews and a Light Spicy Asian Chili Vinaigrette from Marzetti. Don’t be scared off by the words spicy or chili – I’m not a big spicy fan, but I found the cashews and dressing to be tasty while giving just a little bit of heat to the salad (plus, you can control the amount of heat you get from the dressing by using it sparingly as I did – a little goes a long way). So while my son enjoyed a burger and fries, I ate every little morsel in my salad bowl! Bonus – the half-size salad I enjoyed is only 240 calories, so you won’t blow your diet on a quick lunch of a half size. If you’re really hungry, the full size is only 380 calories.
