Roasted Garlic & Tomato Soup

I’m constantly pinning delicious recipes on Pinterest and thought it would be fun to start a challenge where I actually make what I pin. The challenge is called Don’t Just Pin It….Eat It!  The theme for this month is Soup & Stew.I had a look through my boards for soup recipes I wanted to try. I even up ended making a Soup & Stew board so I could keep them all in one spot and help me decide on which ones I wanted to try.

I ended up making Roasted Garlic & Tomato Soup from 1001Recipe. com. 

 

Here is my attempt:

This recipe was a little bit more complicated than my usual fare. I don’t often make pureed soups nor do I roast tomatoes or garlic. In fact, this was my first time doing that.

I got all my ingredients ready to go and just had a few items I had to pick up at the store.

I cut my tomatoes in half, took off the top of the garlic bulb and drizzed with olive oil on a baking sheet.

In the oven it went for 45 minutes. My garlic came out looking a little too toasty. I wondered if that was normal.

Then I waited till it cooled because I nearly burnt my fingers off trying to peel the skin off that darn tomato. Once it was cooled to my satisfaction, I peeled the skin and squeezed out the insides of each individual garlic clove into a bowl. I’m a messy cook.

The next step is to saute onions until they are soft. Add two cups of chicken broth and bring to a boil.

Finally add your spices, garlic, tomatoes and butter and simmer for 3 minutes.

Almost there! Next part is where it got a little messy. I don’t own a big blender or a food processor so I had to puree the mixture in my magic bullet. It worked but took a couple steps to get to the finished product.

I garnished with Parmesan cheese and salt and pepper. It was spicy and delicious!
