I’ll be real and say that nothing beats the smell of these Trail Mix Oatmeal Cookies wafting through the house.

They’re beautifully buttery, and chewy, and are packed with delicious raisins for a hint of extra texture. Oh, and don’t forget the slivered almonds that add a nutty crunch to the mix!

What makes this one of my all-time favorite dessert recipes is the fact that it’s incredibly easy to whip up. Not only does it make great use of pantry staples, but it’s ready in 10 minutes!

Plus, it’s virtually impossible to overmix the batter (unlike certain cakes!). So, you’ll get perfectly golden, soft, and warm cookies every time you pull that tray out of the oven.

    Your cookies will store in an airtight container at room temperature for just under a week. If you start to notice any texture changes or mold, it’s time to toss them!

    Can I Freeze?

    You can absolutely freeze these trail mix oatmeal cookies.

    Just wait for them to cool completely before placing them on a single layer of parchment paper in the freezer.

    Once your cookies have frozen, make sure they’re not stuck together before placing them in individual freezer bags!

    Trail Mix Oatmeal Cookies

    An easy cookie recipe packed with mix-ins! Loaded with raisins, coconut, almonds, and brown sugar.

    Ingredients
     
     

    • cup unsalted butter softened
    • 1 cup brown sugar
    • 1 large egg
    • ¼ tsp almond extract
    • 1 ½ cups old-fashioned oats
    • 1 cup all-purpose flour
    • ½ tsp baking powder
    • ½ tsp baking soda
    • ¼ tsp salt
    • cup slivered almonds
    • cup raisins
    • cup shredded sweetened coconut

    Instructions

    • Preheat oven to 375°F. Grease two cookie sheets and set aside.
    • In a large bowl, beat the butter and brown sugar until combined. Beat in egg and almond extract.
    • In another large bowl, stir together flour, baking powder, baking soda, oats and salt. Add dry mixture into wet mixture and stir to combine.
    • Stir in slivered almonds, raisins and shredded coconut.
    • Place a heaping tablespoonfuls of cookie dough on the baking sheet, spacing them about 2 inches apart.
    • Bake for 10 minutes. Cool on a cooling rack.
