Cowboy Cookies

These Cowboy Cookies are full of the best flavors and textures. These hearty homemade cookies are packed with chewy oats, chopped almonds, semi-sweet chocolate chips, and raisins.

I’m not sure of the origin of Cowboy Cookies and you’ll find a variety of versions of them if you look online. To me, they mean a cookie that’s packed full of good stuff like a cowboy is. This recipe has a lot going on with all those ingredients. It makes one delicious cookie!

Feel free to tweak it and add your own spin to it. Don’t like raisins? Try dried cranberries or leave them out. Chocolate chips not your thing? Add some white chocolate chips or butterscotch chocolate chips. You get the idea. Just make sure you pack them full of your favourite ingredients!

Why You’ll Love Cowboy Cookies

  • Quick and easy. This recipe is made with the simplest of ingredients and take just 10 minutes to prep.
  • Hearty and delicious. Cowboy cookies are definitely a delicious dessert, but also make total sense as a snack. I mean, it’s like a trail mix in cookie form!
  • Customizable. While this recipe calls for almonds, semi-sweet chocolate chips, and raisins, that doesn’t mean you have to stick to those. Feel free to add or sub in whatever mix-ins you prefer.

Ingredients

  • Butter – Be sure to soften the butter first so it incorporates easily with the sugars.
  • Sugar – We’re using a combination of brown sugar and granulated sugar. Both add sweetness while the brown sugar contributes to their moist and chewy texture.
  • Egg – You need just 1 egg to help bind the ingredients together so the cookies can hold their shape.
  • Vanilla Extract – A splash of pure vanilla extract gives the cookies flavor depth and a touch of sweetness.
  • All-Purpose Flour – The base of our cookie dough. You can also easily make these cookies gluten-free with a 1:1 gluten-free flour blend.
  • Cocoa Powder – We’re using just a little bit of cocoa powder to add a little bit of richness to our cookies and to bring out the flavor of the chocolate chips.
  • Baking Powder and Baking Soda – The combination of baking powder and baking soda helps the cookies rise in the oven for a softer texture.
  • Salt – Cuts the sweetness and enhances the flavors.
  • Old-Fashioned Oats – Make sure you use regular old-fashioned rolled oats. Not instant or quick-cooking.
  • Mix-Ins – We’re giving our cookies all the flavors and textures with a mix of semi-sweet chocolate chips, raisins, and chopped almonds.

How to Make Cowboy Cookies

  • Step One: Preheat oven to 375°F. Grease a baking sheet with cooking spray and set aside.
  • Step Two: Beat butter and sugar on low speed until combined. Add in egg and vanilla. Beat on low speed for about 4 to 5 minutes.

    Recipe Tips and Tricks

    • Grease the baking sheet. A light layer of cooking spray helps prevent the bottoms of the cookies from sticking and burning on the baking sheet.
    • Spoon and level the flour. The best method for measuring flour is to spoon it into your measuring cup, then gently level it off with your finger. This prevents it from getting too packed in which keeps the texture moist. Too much flour equals dry and crumbly cookies.
    • Don’t over-mix the dough. Over-mixing the dough can over-develop the gluten in the flour which results in dry, dense cookies. Mix only until just combined.
    • Slightly under-bake. The cookies are done when the edges are turning light golden-brown, but the middle still looks slightly under-baked. They will finish setting up as they cool on the baking sheet and the texture will be perfect!
    • Customize! Cowboy cookies can really be anything you want them to be. Don’t love raisins? Leave them out or use dried cranberries instead. Want another type of nut? Swap the almonds out for pecans, walnuts, or chopped macadamia nuts. You can even swap the chocolate chips out for white chocolate, butterscotch, cinnamon, or a mix of a couple different kinds.

    Storage Instructions

    Baked cowboy cookies will last in an airtight container on the counter for 3-4 days or in the fridge for up to a week. 

    Enjoy them as-is or warm them for a few seconds in the microwave!

    Can I Freeze Cowboy Cookies?

    Yes! You can freeze either the cookie dough or the baked cookies. Here’s how:

    • Dough: To freeze the dough, mix it up as directed, then portion it out onto a baking sheet. Place the baking sheet  in the freezer for about an hour or until the dough balls harden. Once they’re frozen, transfer them to a ziplock bag and store them in the freezer for up to 3 months. When you’re ready to enjoy, bake from frozen, but add a couple of minutes to the cooking time.
    • Cookies: Baked cookies can be stored in the freezer for up to 3 months. Simply assemble and bake as directed, let them cool completely, then layer them in an airtight container separated by sheets of parchment paper. When you’re ready to enjoy, thaw on the counter or warm in the microwave.
