Maple Apple Pudding

Warm Maple Apple Pudding is the perfect end to a fall dinner! The sweet flavours of maple, along with apples and cinnamon, is delicious topped with a scoop of vanilla ice cream.

When I think fall desserts, there are two ingredients that immediately pop into my head. Can you guess what they are?

I know it’s not hard- pumpkins (of course!) and apples. You’ve probably been seeing an explosion of recipes for both on Pinterest. I normally make Apple Crisp, but this year I wanted to try something a little different. I had a recipe clipping from an old Chatelaine magazine that I’ve been wanting to try for years. I had some Red Delicious apples on hand so I figured I’d give it a whirl! I know Red Delicious isn’t traditionally used in baking, but I improvised. Thankfully, it turned out delicious!

My Maple Apple Pudding Bake is similar to bread pudding, but is much simpler to make. It might remind you of those boxes of Sauce N’ Cake. Only, this homemade version is a million times better.

    This old-fashioned baked maple apple pudding recipe comes from humble beginnings, and was once referred to as poor man’s pudding. The classic dessert has been transformed over the years, and you are going to love this oh-so comforting apple and maple pudding version. 

    The baked maple apple pudding also resembles a clafoutis which was made famous by Julia Child. Clafoutis is often described as flan, pancake and soufflé in one.  

    Now this is what I call a scrumptious fall dessert. I’ll be making this one again, but think I’ll use Granny Smith apples next time since I have a bunch in my fridge right now! I love making hot pudding recipes like this during the fall and winter months and you can’t go wrong with apples.

    • Apples – Use any good baking apple or combination of apples. (See more on this below!)
    • Maple syrup – For a high quality maple syrup, try Maple Lifestyle.
    • Eggs
    • Butter – You can use salted or unsalted in this recipe.
    • Milk – I recommend using full fat milk for the best results.
    • Lemon juice
    • All-purpose flour
    • Baking powder
    • Salt
    • Raisins – Use black or gold raisins, whichever you prefer.
    • Cinnamon

    How to Make Maple Apple Pudding

    • Step One: Preheat oven to 375F. Grease an 8 inch square baking pan and spread apples on the bottom. Pour 1/2 cup maple syrup over top of the apples.
    • Step Two: In a bowl, whisk together the eggs, butter, lemon juice, remainder of maple syrup and milk.
    • Step Three: In another bowl, stir together the flour, baking powder and salt.
    • Step Four: Stir flour mixture into egg mixture until fully combined and smooth. Stir in raisins and cinnamon.
    • Step Five: Pour batter over the apples as evenly as you can.
    • Step Six: Bake for about 30 minutes or until apples are cooked and the top is golden.

    Recipe Tips and Tricks

    • For a richer maple flavor, drizzle each serving with some additional warm maple syrup.
    • Don’t overcook – the pudding is ready as soon as a skewer inserted into the middle of the pudding comes out clean. You don’t want to lose all of the creaminess of the pudding.
    • Serve immediately, if you can. Baked puddings are best served warm. Scoop pudding into a bowl, then add a scoop of vanilla ice cream or a dollop of whipped cream on top.

    Variations and Substitutions

    • Mix up your fruits, using fruits available in fall and winter, such as apples, pairs, and persimmons.
    • While I haven’t tried it, this dessert would make a sweet presentation if prepared in individual ramekins. Just be sure to adjust your cooking time and keep an eye on them, to prevent overcooking.
    • If you don’t wish to use maple syrup in the recipe, your best substitution would be honey. 

    Storage Instructions

    Once cooled, store in an airtight container in the fridge for up to 3 days. 

    Can I Freeze?

    Yes, you can freeze baked pudding. After it is cooled completely, store pudding in an airtight container in the freezer for up to 90 days. 

    What apples are best for baked desserts?

    Most apples will hold up well for baking, with the exception of McIntosh, Gala, Fuji and a few others. My favorite apples for baked desserts are Granny Smith, Braeburn, Cortland, Crispin, Golden Delicious, Honeycrisp, Ida Reds, Jonagold, and McIntosh.

    • 4 Granny Smith apples your choice, peeled, cored and chopped into ½ inch pieces
    • ¾ cup maple syrup divided
    • 2 large eggs
    • 2 tbsp salted butter melted
    • ¼ cup milk
    • 1 tbsp lemon juice
    • ½ cup all-purpose flour
    • 2 tsp baking powder
    • ¼ tsp salt
    • ½ cup raisins
    • ½ tsp cinnamon

    Instructions
