Baked Chicken Parmesan

Baked Chicken Parmesan is fast enough for a weeknight, but elegant enough for dinner parties! Serve over spaghetti or on its own.

Baked Chicken Parmesan is one of the most delicious recipes I have made in awhile. Sautéed onions and zucchini paired with boneless chicken and topped with a tomato sauce and cheese and baked till golden and bubbly. This is a dish that anyone can enjoy. Great for weeknights but also offers a gorgeous presentation for entertaining guests.

I discovered this recipe for Baked Chicken Parmesan in a cookbook I’ve owned for probably 10 years, Dietitians of Canada Great Food Fast. It has easy recipes that are healthy and really easy to make. All the ingredients are easy to find that you may already have on hand! You can serve it over rice or pasta to make it a complete meal or just eat it on its own as I do.

    • Extra virgin olive oil
    • Chicken breasts

    How to Make Baked Chicken Parmesan

    • Step One: In a large skillet, heat 1 tsp of oil over medium-high heat. Add chicken breasts and sear for 1 to 2 minutes per side until golden brown. Transfer to a baking dish.
    • Step Two: Heat remaining oil in the skillet. Add zucchini and onions and saute for 3 to 5 minutes until lightly browned. Remove from pan and place on top of the chicken.

    • Step Three: In a bowl, mix the tomato sauce and Italian seasoning. Pour over the chicken and vegetables. Sprinkle with mozzarella and Parmesan cheese on top.
    • Step Four: Bake in a 350°F oven for 30 minutes or until juices run clear on the chicken when it’s pierced with a fork.

    I think the added veggies in the mix offer so much flavor to the dish. It is such a delightful recipe that we have made time and time again. If you are a fan of tomato and chicken together I am sure this recipe is right up your alley.

    Do You Pre-Cook the Chicken for Baked Chicken Parmesan 

    Yes, you will partially cook your chicken in a skillet to add a crust to the chicken. This offers a great texture to the dish but also adds so much more flavor and depth to the Chicken Parmesan.

    Do You Add a Crust to your Chicken 

    No. I wanted to offer a lighter version so I option from the traditional breading of Chicken Parmesan. To be honest, I love how it isn’t so heavy, and you won’t miss the breadcrumbs!

    What to Serve with Baked Chicken Parmesan 

    As I mentioned above we generally serve it over rice or pasta. But you can eat it alone or pair with a salad for a lighter option. You might even want to add a side of roasted or steamed veggies if you prefer. 

    • Pasta
    • Rice (0r cauli-rice) 
    • Zucchini noodles
    • Green salad
    • Roasted vegetables
    • Breadsticks or garlic bread

    How to Store Leftovers 

    Simply place any leftovers in airtight containers and place in the fridge. This is a great dish to meal prep with or eat again for a meal later down the line. You can store the leftover chicken in the fridge for up to three days. At that time you will need to toss out any leftovers.

    Can You Freeze Baked Chicken Parmesan 

    I have not tried to freeze this but I think you would have no problem freezing any leftovers. Just cover tight or place in airtight container and store anywhere from 1-3 months. Thaw in the fridge the night before and then reheat in microwave or oven. If you reheat in the oven I recommend keeping it wrapped in aluminum foil to prevent the cheese from overcooking.

    Will Baked Chicken Parmesan Double Good 

    Yes. Feel free to double or even triple this recipe if you need to. Just grab a larger pan and use that for baking. I have had no trouble making extra of this.

    1. I used to make chicken Parmesan very often b/c my brother loved it. My recipe was very simple. Essentially, I dipped chicken breasts in beaten egg and then in Italian flavor bread crumbs. I put them in a baking dish with pasta sauce(flavor of choice) and baked for about 25 min. I sprinkle with Italian blend shredded cheese and bake for an additional 5 minutes or until cheese melts. Serve with garlic bread.
