My children and I love to head out to our local farmers market every Saturday morning and it is a great way to introduce them to different types of fruits and vegetables. They also enjoy growing their own beans, tomatoes, herbs and sweet peppers in our backyard organic garden. While they are more than willing to eat their familiar vegetables, I find that my boys in particular are a bit more resistant to try new ones.
Having them help by participating in the gathering, preparation and cooking process makes them much more willing to eat something new at the dinner table. That is why I was so excited by Country Crock’s new initiative to get the kids involved with their Veggie Shopping Adventure!
Country Crock® understands that choosing the right vegetables i.e. fresh, frozen or canned can be overwhelming to many busy families. The Country Crock® Veggie Shopping Adventure has the goal of sending families out to grocery stores, farmers markets and my personal favorite, roadside stands in an effort to make loading up with vegetables fun for everyone, including the kids.
For our Veggie Shopping Adventure, my kids grabbed their Country Crock® reusable tote bags and dry erase reusable vegetable shopping list and we headed out to our local market. They selected their favorites such as fresh organic, local carrots, broccoli, green beans and sweet potatoes and even decided to try a few new, interesting vegetables like an artichoke and an acorn squash. We returned home with our bounty to talk about what recipes they wanted to make for dinner later that evening. They decided on a familiar favorite, roasted honey glazed carrots and a new recipe for roasted artichoke with lemon and garlic. After helping me to scrub and peel the vegetables, we made these two easy recipes and put it in the oven to cook. The roasted honey glazed carrots (I got the inspiration for this recipe months ago on the Country Crock® Facebook page that is loaded with delicious recipes) were topped with melted Country Crock® and a sprinkle of sea salt and pepper and it was absolutely delicious……..not one leftover carrot. My children were so proud to tell their dad that they were the chefs who created the dish. For the artichoke, once it was almost finished roasting we added a tablespoon of Country Crock® on top and wrapped it back up to roast for five more minutes. Everyone (even the kids) was excited to try our first roasted artichoke and it was very tasty. The most fun we had all day was taking apart the leaves and eating the little bit of artichoke “meat” found in the center. While we may have not gotten much to eat from this morsel it was still a nice way to try a new vegetable together and besides that……..who knew that my kids would like eating an artichoke!
My children and I really enjoyed the Country Crock® Veggie Shopping Adventure and I appreciate that it helped interest my children in trying some new vegetables that we may never have considered.
